Recipes for FPIES please

My name is Angeliki. My son was diagnosed with FPIES at age of 4 months.He is now 3 years old and has never tasted a chocolate, a yogurt, a birthday cake or an ice cream like his "normal" friends do due to his allergy to all dairy products. Every time a kid brings a birthday cake in school in order to celebrate his/her birthday, the teacher takes my son away from the classroom so he cannot see the other kids eating their piece of cake. His questions afterwards kill me every single day. Unfortunately the doctors' knowledge here in Greece is quite eliminated as FPIES is not known as a food allergy. When my son went to the hospital for the very first time, the doctors couldn't understand what has happened to him and started reading the foreign medical literature. As a result they cannot provide you with sufficient information on how you can deal with this syndrome in terms of nutrition or even psychological support. We have been recommended by them to visit the hospital every 2 years in order my son to taste full milk waiting to see if he will tolerate it or not. We have already come in this process twice with no effect. Soya milk is also prohibited. I would appreciate it if you could give me any food and sweets recipes and cooking tips where the dairy products are excluded. Thank you in advance.

I'm so sorry to hear about your son's FPIES. My son too has FPIES to milk and soy. He is three and we are going for his first food challenge on Wednesday in the doctors office for milk. I am praying he has outgrown it. Im terrified but I need know if he still has it. I know how difficult it is to tell them they can't have something when all the other kids have it. Here is a recipe I use for cake and or cupcakes for him.

Vanilla Crazy/Wacky Cake
INGREDIENTS
1 1/2 Cups flour + 3 Tablespoons (all-purpose)
1 Cup white sugar
1 tsp. baking soda
1/2 tsp.  salt
1 tsp. white vinegar
1 1/2 tsp.  pure vanilla extract
5 Tbsp. vegetable oil
1 Cup water
Directions
Preheat oven to 350 degrees F.
Mix first 4 dry ingredients in a greased 8" square baking pan.  Make 3 depressions in dry ingredients - two small, one larger (see #3 in photo below). Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression.  Pour water over all.  Mix well until smooth. Bake on middle rack of oven for 35 minutes. Check with toothpick to make sure it comes out clean.  Cool.  Top with your favorite frosting.

I use powder sugar on top of it for his "icing"

I also use a mix for cake/cupcakes from Cherrybrook Kitchen. I'm not sure if you can get it in Greece but maybe you can buy it online? They are peanut free, milk free, soy free and egg free. They have a line of cookies and pancake mix and icing and cake mix. I still stay away from the chocolate products because I'm paranoid thatvthe chocolate even if dark chocolate could contain milk from cross contamination.

When was the last time your son was tested in the hospital?
