My son was diagnosed with FPIES a few months ago, along with other allergies. So far is just on elecare, and neocate nutra, and he is okay eating blueberries and quinoa. He will be 1 on the 23rd of this month and I have noooo idea what to make him for his smash cake! He reacts to rice, oats, wheat, milk, allergic to peanuts (anaphylaxis), tree nuts, eggs, strawberries and pears. Everything I look at he is allergic to something else in it.. any ideas would be greatly appreciated. Thank you

You need an oil of some kind. If you can use an oil you can make an adaptation of a crazy cake formerly called dump cake and before that depression cake. You need a flour, oil and sugar which is cane (not refined) is considered a freebie as well as baking soda and salt also freebie. Oh and vinegar but cane sugar vinegar is a freebie.  Flavoring optional which you could do with puréed blueberries. Quinoa flour is available on Amazon. Both my son’s first passes were blueberries!! My kids didn’t any passes their first birthdays. Your son is doing great!! I’ve also heard of making cake out of nutra but you nearly have the ingredients for cake. We started with sunflower oil. It’s got a high pass rate.

Safe cake
1 scant cup banana, apple, sweet potato, lentil, quinoa etc flour fluffed well with a wisk (purchased off Amazon)
1/2 cup strawberry/other fruit flour (I milled dehydrated strawberries I had made) or puréed fruit and reduce water
1/2 cup cane sugar
1 teaspoon baking soda (pure elemental)
1/2 teaspoon salt
1 cup water
3/8 cup safe oil
1 tablespoon safe vinegar such as cane sugar vinegar
Mix dry ingredients using a wisk and mix wet ingredients separately. Combine. Bake at 350. Mini muffins took 10 minutes and regular muffin took 20. A toothpick came out clean and I'm glad I checked because I didn't think they were done. :-)

Just letting you know it gets better- my firstborn son was just as severe and now he's FPIES free at age 5!!!  A miracle!!  I sadly never got to give him a smash cake as we didn't even have a formula at age 1 (breastmilk only).  Neocate has a bunch of recipes on its website you can make with the formula.  Maybe something will catch your eye?
